Organic Olive Oil
Our Organic Olive Oil (OOO) is as organic as it gets. We use ancient techniques which have been passed down from generations to bring you the highest grade Olive Oil. Our Oil is made from Olives harvested early in the season, to preserve the quality and nutritional benefits.
Purity
Our harvest is produced with over 400 olive trees. We use organic fertilisers which are completely free from any chemicals. This is what makes our Oil 100% pure and organic in it's real term. Our Oil is produced using organic sustainable farming methods. The land where our Olive Trees grow is managed efficiently by using traditional composting methods from olive tree branches enabling us to use them as fertilizers. This is the distinction that makes us Organically certified.
Quality
Our organic EVOO is distinct in colour and taste. We cold press our olives which means the nutritious substance and content is preserved in our oil. You will clearly see a difference in the rich green colour in our Olive Oil compared to oil produced by mechanical means and mass produced oil. Our Oil has a very distinct fresh, vibrant fruity taste balancing the peppery bitterness which is a sign of high quality olives.
Biophenols
Biophenols in olive oil are natural chemical compounds with antioxidant properties that offer numerous health benefits. These compounds include simple phenols, such as tyrosol and hydroxytyrosol, and complex phenolic compounds such as oleuropein and ligustroside.
An important indicator of oil quality and its health benefits is the concentration of these compounds in olive oil. Their concentration can be mainly influenced by:
The quality of the extraction process;
The variety of olives used;
The degree of ripeness of the olives;
The storage method and freshness of the product.
Biophenols are present in the olive fruit and are retained as the oil is extracted from the olives. One of the chemical tests that extra virgin olive oil must undergo in its grading process is for the concentration of these biophenols.
When you taste an extra virgin olive oil you will often detect some peppery or bitter notes, especially at the back of your throat. Those tasting notes and that particular peppery bite are the direct result of biophenols in the oil. In addition to providing this unique flavour that is one of the hallmarks of true EVOO, these phenolic compounds impart the antioxidative benefits.
Our EVOO records 570 Biophenols in 0.2mg of Oil which is a very high content and testifies to the qulity of the Oil.
